1. Ingredients
For the dough
-
2 cups all-purpose flour (maida)
-
1 tsp instant yeast
-
1 tbsp sugar
-
½ tsp salt
-
2 tbsp oil or melted butter
-
¾ cup lukewarm milk or water (add gradually)
-
2 tbsp plain yogurt (optional, for softer dough)
For the cheesy taco filling
-
300 g ground beef or chicken mince
-
1 small onion, finely chopped
-
1 tbsp oil
-
1 tsp garlic paste or 2 minced garlic cloves
-
1 small tomato, finely chopped (optional)
-
½ cup capsicum, finely chopped
-
1 tsp paprika or Kashmiri red chilli powder
-
1 tsp cumin powder
-
1 tsp coriander powder
-
½ tsp black pepper
-
½ tsp red chilli powder, or to taste
-
¾ tsp salt, or to taste
-
1 tbsp tomato ketchup or tomato paste
-
1–2 tbsp water, as needed
-
1 cup grated mozzarella cheese
-
½ cup grated cheddar cheese
Shortcut: Use 1½–2 tbsp taco seasoning instead of the individual spices, adjusting the salt to taste.
For sealing and cooking
-
2 tbsp flour mixed with a little water to make a paste
-
1 egg, beaten, or a little milk for brushing
-
1 tbsp sesame seeds (optional)
-
Oil for frying, if deep-frying
2. Make the dough
-
In a large bowl, combine the flour, instant yeast, sugar, and salt.
-
Add the oil and yogurt, if using.
-
Gradually pour in the lukewarm milk or water, mixing until a soft dough forms.
-
Knead for 8–10 minutes until smooth and elastic. Add a little flour if very sticky, but avoid making the dough stiff.
-
Cover the bowl and leave the dough in a warm place for 60–90 minutes, or until doubled in size.
Important: The liquid should be lukewarm, not hot, or it may damage the yeast.
3. Prepare the taco meat filling
-
Heat 1 tbsp oil in a pan over medium heat.
-
Add the chopped onion and cook for 2–3 minutes until softened.
-
Add the garlic paste and cook for 30 seconds.
-
Add the mince and break it apart with a spoon. Cook until browned and thoroughly cooked.
-
Add the paprika, cumin, coriander, black pepper, chilli powder, and salt.
-
Stir in the tomato, capsicum, and ketchup or tomato paste.
-
Cook for another 4–6 minutes until the vegetables soften and most of the liquid evaporates.
-
If the mixture looks dry, add 1–2 tbsp water and cook briefly.
-
Remove from the heat and let the filling cool completely.
The secret to perfect pockets: Keep the filling fairly dry. A watery filling can make the dough soggy and cause the pockets to open during cooking.
4. Add the cheesy filling
-
Once the dough has risen, gently press it down to release excess air.
-
Divide it into 8 equal balls.
-
Roll each ball into a circle approximately 5–6 inches (13–15 cm) wide.
-
Place 1–2 tbsp of the cooled taco filling in the centre.
-
Add a generous handful of mozzarella and cheddar cheese.
Don’t overfill the dough. Leave a border of about 1 inch around the edges.
5. Shape the taco pockets
You can use either of these shapes:
Option A: Half-moon pockets
Fold the dough circle over the filling to form a semicircle. Press the edges firmly, then crimp with a fork.
Option B: Square pockets
Fold the left and right sides toward the centre, then fold the top and bottom over them. Press all seams closed to form a square parcel.
-
Use a little flour paste around the edges if needed to help seal the dough.
-
Place each pocket seam-side down on a lined baking tray.
-
Cover and rest for 15–20 minutes while you preheat the oven.
6. Cook the taco pockets
Choose your preferred method.
Oven-baked
Recommended
-
Preheat the oven to 190°C.
-
Brush the pockets with beaten egg or milk.
-
Sprinkle sesame seeds on top, if desired.
-
Bake for 18–25 minutes, until golden brown and cooked through.
-
Rest for 5 minutes before serving.
Air fryer
-
Preheat to 180°C.
-
Brush the pockets lightly with oil or egg wash.
-
Arrange in a single layer without overcrowding.
-
Air-fry for 10–15 minutes, turning halfway if needed, until golden and cooked through.
Pan-fried
-
Heat a thin layer of oil in a heavy pan over low to medium-low heat.
-
Place the pockets seam-side down and cover with a lid.
-
Cook for approximately 4–6 minutes per side, adjusting the heat to prevent burning.
-
Check that the dough is cooked through and the cheese has melted before serving.
Deep-fried
-
Heat oil to 170–175°C.
-
Carefully lower in a few pockets at a time.
-
Fry for approximately 3–5 minutes, turning until evenly golden.
-
Drain on a wire rack or paper towels.
Make sure the pockets are sealed securely and the filling is already fully cooked.
7. Easy taco dipping sauce
This creamy sauce goes perfectly with the cheesy pockets.
Ingredients
-
½ cup mayonnaise
-
2 tbsp ketchup
-
1 tbsp plain yogurt
-
½ tsp paprika
-
¼ tsp garlic powder
-
A few drops of lemon juice
-
Salt and black pepper to taste
Method
Mix everything in a small bowl until smooth. Refrigerate for 10–15 minutes before serving for a better flavour.
For a spicy version, add hot sauce or a pinch of chilli powder.
8. Tips for extra cheesy, crispy pockets
-
Use mozzarella for stretch: Cheddar adds a stronger, richer cheese flavour.
-
Cool the filling: Hot filling can soften the dough and make it harder to seal.
-
Don’t overfill: Too much filling can burst the pockets during cooking.
-
Seal every edge: Use flour paste if the dough won’t stick together.
-
Avoid excess moisture: Cook the mince until the liquid has evaporated.
-
For a golden crust: Brush with egg wash before baking.
-
For extra crunch: Sprinkle a little grated cheese on top during the final few minutes of baking.
9. Variations you can try
-
Chicken taco pockets: Use finely shredded cooked chicken instead of mince.
-
Vegetarian pockets: Use black beans, sweetcorn, capsicum, onion, and taco seasoning.
-
Extra-spicy pockets: Add jalapeños, green chillies, or hot sauce.
-
Pizza-taco pockets: Add a little pizza sauce, mozzarella, olives, and cooked mince.
-
Creamy cheese pockets: Mix 2 tbsp cream cheese into the cooled filling before adding the grated cheese.
10. Storage and reheating
-
Refrigerator: Store cooked pockets in an airtight container for up to 3 days.
-
Freezer: Freeze cooked, cooled pockets for up to 2 months for best quality.
-
Reheating: Heat in an oven or air fryer at 170–180°C until hot throughout and crispy again.
-
Make ahead: Prepare the filling a day ahead and refrigerate it. Shape and cook the pockets when ready.
Keep raw meat and cooked filling separate during preparation, and ensure the mince is thoroughly cooked before assembling.
Serving suggestion: Serve the pockets hot with taco sauce, garlic mayo, or salsa, alongside fries or a fresh salad. The best bite is when the crust is golden and the mozzarella stretches as you pull it apart! 🌮🧀
