Prep time: 20 minutes Bake time: 50–65 minutes Cooling time: 20–30 minutes Yield: 1 loaf (8–10 slices)

Ingredients

For the dried fruit

  • 1½ cups (225 g) mixed dried fruit or raisins

  • ¼ cup (60 ml) orange juice or warm water

  • 1 tsp orange zest (optional)

For the cake batter

  • 1½ cups (190 g) all-purpose flour (maida)

  • ½ cup (115 g) unsalted butter, softened

  • ½ cup (100 g) brown sugar

  • 2 large eggs, at room temperature

  • ¼ cup (60 ml) milk

  • 1½ tsp baking powder

  • 1 tsp ground cinnamon

  • ¼ tsp ground nutmeg

  • ¼ tsp ground ginger (optional)

  • 1 tsp vanilla extract

  • ¼ tsp salt

Optional topping

  • 1 tbsp brown sugar for a lightly crunchy top

  • A few extra raisins or dried cranberries

Instructions

Step 1: Prepare the dried fruit

  1. Place the dried fruit in a bowl.

  2. Pour over the orange juice or warm water.

  3. Leave for 15–20 minutes to soften.

  4. Drain any excess liquid and pat the fruit dry.

  5. Stir in the orange zest, if using.

This step helps keep the fruit plump and moist inside the cake.

Step 2: Prepare the loaf tin

  1. Preheat your oven to 170°C (340°F), or 160°C for a fan oven.

  2. Grease a loaf tin approximately 9 × 5 inches (23 × 13 cm).

  3. Line the base and sides with baking paper, leaving a little overhang to lift out the cake later.

Step 3: Mix the dry ingredients

In a medium bowl, whisk together:

  • Flour

  • Baking powder

  • Cinnamon

  • Nutmeg

  • Ginger, if using

  • Salt

Set aside.

Step 4: Cream the butter and sugar

  1. Place the softened butter and brown sugar in a large mixing bowl.

  2. Beat for 3–4 minutes until pale, creamy, and fluffy.

  3. Scrape down the sides of the bowl as needed.

Properly creaming the butter and sugar helps produce a lighter cake.

Step 5: Add the eggs and vanilla

  1. Add the eggs one at a time, beating well after each addition.

  2. Mix in the vanilla extract.

  3. If the mixture looks slightly curdled, don’t worry; adding the flour will usually bring it together.

Step 6: Combine the batter

  1. Add one-third of the flour mixture to the butter mixture and gently mix.

  2. Pour in half the milk and mix briefly.

  3. Repeat with another third of the flour, the remaining milk, and then the remaining flour.

  4. Mix only until no dry flour remains.

The batter should be thick but soft enough to drop slowly from a spoon. Avoid overmixing, as this can make the loaf dense.

Step 7: Fold in the fruit

  1. Toss the drained dried fruit with 1 teaspoon of flour taken from the measured amount, if desired. This can help distribute it through the batter.

  2. Gently fold the fruit into the batter with a spatula.

  3. Transfer the batter to the prepared loaf tin.

  4. Smooth the top and sprinkle with brown sugar or extra fruit if desired.

Step 8: Bake the loaf

  1. Place the tin on the middle rack of the preheated oven.

  2. Bake for 50–65 minutes.

  3. Begin checking at 50 minutes. Insert a skewer into the centre; it should come out clean or with a few dry crumbs.

  4. If the top browns too quickly, loosely cover it with foil for the final 15–20 minutes.

Avoid opening the oven during the first 35 minutes, as this can cause the loaf to sink.

Step 9: Cool and slice

  1. Let the cake rest in the tin for 10–15 minutes.

  2. Lift it out using the baking paper and place it on a wire rack.

  3. Allow it to cool completely before slicing.

For the neatest slices, use a serrated knife and a gentle sawing motion.

Tips for a moist, flavourful fruit loaf

  • Use brown sugar: It gives a deeper, caramel-like flavour and helps retain moisture.

  • Don’t skip soaking: Plump fruit makes the finished loaf more tender.

  • Measure the flour carefully: Too much flour can make the cake dry.

  • Don’t overbake: Start checking early, especially if your loaf tin is dark or small.

  • For richer flavour: Replace the orange juice with strong black tea.

  • For extra warmth: Add a small pinch of ground cloves or mixed spice.

Easy variations

  • Nutty fruit loaf: Add ½ cup chopped walnuts or almonds.

  • Citrus fruit loaf: Add extra orange zest and a little lemon zest.

  • Apple and raisin loaf: Fold in ½ cup finely chopped apple, reducing the milk slightly if the apple is very juicy.

  • Glazed fruit loaf: Brush the warm loaf with 1–2 tbsp warmed apricot jam for a shiny finish.

Storage

  • Room temperature: Keep in an airtight container for 3–4 days in a cool environment.

  • Refrigerator: Store for up to 1 week, wrapped well to prevent drying.

  • Freezer: Slice, wrap individually, and freeze for up to 3 months.

The spices often taste even better the next day as the flavours develop.

Serving suggestions

Serve thick slices plain, lightly toasted with butter, or alongside tea or coffee. For a special treat, spread with cream cheese or serve with a little warm custard.

Baker’s tip: If you want a traditional, deeper fruit-cake flavour, replace the orange juice with strong black tea when soaking the fruit and leave the baked loaf wrapped overnight before slicing. The fruit flavours and spices will become even more pronounced.
