No-Bake Strawberry Icebox Cake 🍓
This No-Bake Strawberry Icebox Cake is a creamy, dreamy dessert made with layers of fresh strawberries, fluffy whipped cream, and crisp biscuits that soften into a cake-like texture in the refrigerator. No oven, no complicated baking, and no special equipment required!
Prep time: 25 minutes Chilling time: 6–8 hours (overnight is best) Servings: 9–12 Difficulty: Easy
Ingredients
For the creamy filling
-
2 cups (480 ml) cold heavy whipping cream, at least 30–35% fat
-
225 g cream cheese, softened
-
½ cup (60 g) icing sugar, sifted
-
1 tsp vanilla extract
For the strawberry layers
-
500–600 g fresh strawberries
-
250–300 g plain tea biscuits, graham crackers, or digestive biscuits
Optional toppings
-
2–3 fresh strawberries, sliced
-
2 tbsp strawberry jam
-
White chocolate shavings
-
Crushed biscuits
Important: Use cold whipping cream and dry the strawberries thoroughly after washing. Excess moisture can make the cake watery.
Instructions
Step 1: Prepare the strawberries
-
Wash the strawberries and dry them completely with a clean kitchen towel.
-
Remove the green tops.
-
Slice the strawberries into thin, even pieces, about 3–5 mm thick.
-
Set aside a few attractive slices for decoration.
If your strawberries are very juicy, place the slices on paper towels for a few minutes to absorb excess moisture. Avoid adding sugar to them, as this draws out more liquid.
Step 2: Make the cream cheese mixture
-
Place the softened cream cheese in a large mixing bowl.
-
Add the sifted icing sugar and vanilla extract.
-
Beat for 1–2 minutes until smooth and creamy, with no lumps.
-
Scrape down the sides of the bowl to ensure everything is evenly mixed.
The cream cheese should be soft enough to mix easily but not melted.
Step 3: Whip the cream
-
Pour the cold whipping cream into a separate chilled bowl.
-
Using a hand mixer, beat on medium-high speed for approximately 3–5 minutes.
-
Stop when the cream forms medium-stiff peaks. When you lift the beaters, the cream should hold its shape with a slight curl at the tip.
Be careful not to overwhip, or the cream may become grainy.
Step 4: Combine the cream mixtures
-
Add about one-third of the whipped cream to the cream cheese mixture.
-
Stir gently until smooth to loosen the cream cheese.
-
Add the remaining whipped cream in two portions.
-
Fold gently with a spatula until the mixture is fluffy and uniform.
Do not beat vigorously at this stage, because you want to preserve the air in the whipped cream.
Step 5: Prepare the dish
Use an approximately 8 × 8-inch (20 × 20 cm) or similar-sized deep dish.
-
Spread a thin layer of cream mixture across the bottom. This helps keep the first biscuit layer in place.
-
Arrange a single layer of biscuits over the cream.
-
Break a few biscuits into smaller pieces to fill any gaps.
You can use graham crackers, digestive biscuits, or plain tea biscuits. There is no need to soak them in milk; the moisture from the cream will soften them during chilling.
Step 6: Add the first strawberry layer
-
Spread approximately one-quarter of the cream mixture over the biscuits.
-
Arrange a layer of sliced strawberries over the cream.
-
Cover the strawberries with a thin layer of cream if you prefer the fruit to stay in place.
Try to distribute the strawberries evenly so every slice of cake has plenty of fruit.
Step 7: Repeat the layers
Continue layering in this order:
-
Biscuits
-
Cream mixture
-
Sliced strawberries
-
Cream mixture, as needed
Repeat until the ingredients are used up, finishing with a smooth layer of cream on top.
For a typical 8-inch dish, aim for approximately 3 biscuit layers, depending on the depth of your dish and the thickness of each layer.
Step 8: Decorate the top
Choose your preferred finish:
-
Arrange sliced strawberries in a circular pattern.
-
Drizzle lightly with strawberry jam that has been loosened with a few drops of warm water, then cooled.
-
Sprinkle white chocolate shavings or crushed biscuits around the edges.
For a neat finish, decorate just before serving so the strawberries look fresh.
Step 9: Chill until set
-
Cover the dish tightly with cling film or a lid.
-
Refrigerate for at least 6–8 hours, preferably overnight.
-
During this time, the biscuits absorb moisture from the cream and become soft and cake-like.
-
Slice with a sharp knife and serve chilled.
Don’t skip the chilling time. If you cut the cake too early, the biscuits may remain crunchy and the layers may slide apart.
Tips for the perfect icebox cake
-
Use full-fat cream cheese: It gives the filling body and a slightly tangy flavour.
-
Whip the cream properly: Medium-stiff peaks help the cake hold its shape.
-
Dry the fruit well: Wet strawberries can make the filling loose.
-
Keep the layers even: This makes the finished cake easier to slice.
-
Chill overnight: This produces the softest biscuits and cleanest layers.
-
For extra strawberry flavour: Spread a very thin layer of strawberry jam between selected layers rather than adding too much liquid.
Easy variations
1. Strawberry chocolate icebox cake
Add 2–3 tbsp cocoa powder to a portion of the cream mixture, or sprinkle grated dark chocolate between the layers.
2. Strawberry cheesecake icebox cake
Increase the cream cheese to 300 g and add 1 tsp lemon juice for a more pronounced cheesecake flavour. Keep the whipped cream well aerated.
3. Strawberry Nutella icebox cake
Drizzle a small amount of softened Nutella between the layers. Avoid adding too much, as it can make the dessert overly sweet.
4. Quick three-ingredient version
Use plain biscuits, sweetened whipping cream, and fresh strawberries. Whip the cream to stiff peaks, then layer everything and refrigerate overnight. The result will be lighter and less cheesecake-like.
Storage
-
Refrigerator: Store covered for up to 3 days. The biscuits will continue to soften over time.
-
Freezer: You can freeze it for up to 1 month, although the strawberries and cream may change texture after thawing.
-
Best serving time: Within 24 hours of assembling for a good balance of flavour, texture, and freshness.
Keep the cake refrigerated, and don’t leave it at room temperature for more than 2 hours (or 1 hour in very hot conditions).

These are estimates and will vary with the biscuits, cream, and cream cheese used.
My best tip: Make it the night before you need it. The next day, the biscuits will be tender, the strawberry flavour will have blended with the cream, and the whole dessert will slice like a soft, chilled cake — all without turning on the oven! 🍓
