Ingredients
For the cauliflower
-
1 medium cauliflower (about 500–600 g)
-
2 tbsp olive oil
-
½ cup (50 g) finely grated Parmesan cheese
-
½ cup (60 g) all-purpose flour
-
1 large egg
-
½ cup (50 g) breadcrumbs or panko
For seasoning
-
1 tsp garlic powder
-
½ tsp paprika
-
½ tsp black pepper
-
½ tsp salt, or to taste
-
½ tsp Italian seasoning (optional)
Optional dipping sauce
-
3 tbsp mayonnaise or Greek yogurt
-
1 tbsp lemon juice
-
½ tsp garlic powder
-
Salt and black pepper to taste
Instructions
Step 1: Prepare the cauliflower
-
Preheat your oven to 220°C (425°F), or 200°C for a fan oven.
-
Wash the cauliflower and dry it thoroughly.
-
Cut it into bite-sized florets of roughly equal size.
-
Pat the florets dry with a clean kitchen towel. Removing excess moisture helps them become crispy.
Step 2: Prepare the coating
Set up three shallow bowls:
-
Bowl 1: Mix the flour with half the garlic powder, paprika, black pepper, and salt.
-
Bowl 2: Beat the egg with 1 tbsp water.
-
Bowl 3: Combine the breadcrumbs, Parmesan, remaining garlic powder, and Italian seasoning.
Step 3: Coat the cauliflower
-
Roll each floret in the seasoned flour, shaking off any excess.
-
Dip it into the beaten egg.
-
Press it into the Parmesan breadcrumb mixture until coated on all sides.
-
Repeat with the remaining florets.
Press the coating gently onto each piece so it sticks properly.
Step 4: Arrange for baking
-
Line a baking tray with baking paper.
-
Arrange the coated cauliflower in a single layer, leaving space between pieces.
-
Lightly drizzle or spray with olive oil.
Avoid overcrowding the tray, as trapped steam can make the coating soggy.
Step 5: Bake until crispy
-
Bake for 20–30 minutes, turning the florets halfway through.
-
Check that the coating is golden brown and the cauliflower is tender when pierced with a fork.
-
For extra browning, broil or grill for the final 1–2 minutes, watching carefully to prevent burning.
How to make them extra crispy
-
Dry the cauliflower thoroughly before coating.
-
Use panko breadcrumbs for a crunchier crust.
-
Grate Parmesan finely so it adheres evenly.
-
Leave space between the florets.
-
Serve immediately after baking for the best crunch.
Easy air fryer method
-
Preheat the air fryer to 200°C (400°F).
-
Arrange the coated florets in a single layer.
-
Lightly spray with oil.
-
Air-fry for 12–16 minutes, shaking the basket halfway through.
-
Cook in batches if needed.
Quick garlic dipping sauce
-
Mix the mayonnaise or Greek yogurt with lemon juice, garlic powder, salt, and pepper.
-
Stir until smooth.
-
Refrigerate for 10 minutes before serving.
Variations
-
Spicy Parmesan bites: Add chilli flakes or cayenne pepper to the coating.
-
Extra cheesy: Sprinkle a little more Parmesan over the florets during the last 5 minutes.
-
Gluten-free: Use gluten-free flour and breadcrumbs.
-
Low-carb: Replace the flour and breadcrumbs with finely ground almond flour, and use extra Parmesan. The coating will be different but still delicious.
Serving idea: Serve these bites hot with garlic dip, ranch dressing, or spicy mayo. They’re best eaten fresh while the Parmesan crust is still crunchy!
